There are very few notes about this particular coffee from the roaster. He is more a fan of you just trying it the way you normally do. Open Roasters is a small independent roaster based in New Jersey. He specializes in light roasts and showing that they really have great flavor.
The Story
Open Roasters came to me as a recommendation from a decerning member of the Hanukkah Coffee Box community. He was mentioned as someone who might care about light roasts even more than me. Ron was awesome to deal with and helped me find the perfect fit for this box.

Interesting. Lighter than our normal coffees with mild tropical flavors. Good starter for the morning however pineapple should be in Piña Coladas not coffee 😊

Another Yirgacheffe
This one brewed really nicely. Pleasant and even bloom, nice grind, and reasonably fast for the papers I have. No sudden off gas bubbles
Initial tasting while it’s a bit hot and I like where it’s going. Still mostly the deeper notes but I’m looking forward to the berries from tasting notes
Coffee has come down to temp. I am not getting blueberry or bright fruits but it is delicious. I get some caramel and dried fruit, maybe a touch of stone fruit. It is a solid brew though
Ok, whoa. I let the temp on the mug drop to probably around 50ºC instead of my usual temp and BOOM blueberry city. That was unexpected and REALLY pleasant
This bean has a really long and complex evolution. I really wish I had a second batch to do a couple smaller brews from to dial in grind size, brew temp and drinking temp
It continues to evolve: second pour and as it reheats I am getting a HUGE boost on the nose. This one also took the second pour and reheat very well. Barely a hint of muddiness

I really dig this coffee on the roaster so I might be a little biased. The word that most describes this coffee is “crips.” I feel it when I take the first sip. I get some of the berries, but mostly I get a delicious coco. Not chocolate as much as coco. The bitter taste that you get from a pretty dark bar of chocolate. I have a hard time not feeling chocolate milk when I’m trying the macchiato.
