Day 2: Chromatic - Elefante Dry Process
The Story
Chromatic wasn’t alaways chromatic. When I first moved to the bay area Chromatic was part of Barefoot coffee. They were located on Lawrence Expressway in Santa Clara, a short walk from my first car dealership in the area. They were fameous for their Voodoo Mocha. Or DCM, called a Dark Coconut Mocha. Years ago chromatic moved to San Jose and expanded their bean operation. They are a regular stop whenever I’m in the area.
While they have many different roasts, this one called to me. It’s a medium-light roast, I tend to prefer a natural or dry process to a washed process. The notes of citrus also called to me. Excited to see how it turns out.

Ooh, this is sweeter, indeed. It’s also lighter and crisper. My brew ratio is nearly the same as the one recommended (I use 16:1 instead of their listed 15.6:1) so I stuck with that. I also notice it has a bit more oil on the top of the glass, which I usually only notice in darker roasts (who doesn’t love watching the infinite swirling iridescent patterns?) but it doesn’t have any of the bitterness that comes from dark roasts. There is a deeper back note, however, that helps round out the fruity initial taste.
Mug 2, from the same brew, slowly reheated in the Ember, has the same brightness at the beginning but the deeper back note has become a more immediate mid-note. Less intense but more rounded. I really like that and the progression of this coffee in the cup is surprisingly complex and not something I’m used to from my usual roasters.

I’m always looking for the fruit, and I get it on this one. And funnily enough, I also really like the macchiato as well. Feel like this coffee fits really well.
