Day 3: Sightglass - Organic Worka Chelbessa, Yirgacheffe
The Story
Sightglass is located on Folsom Street in San Francisco, and during a coffee tour of the city, I pegged Sightglass as the best pour over in the city. Walkable from the train station, I would often find a way to stop by on most day trips to the city.
I remember some of my best friends giving me a columbia bean from Sightglass for a holiday many years ago and falling in love with them.
In addition to Sightglass, Yirgacheffe holds a special place in my heart. At a different roaster, a cup of brewed Yirgacheffe really opened my eyes to the depth of coffee flavors. So for that reason today we have a Yigracheffe from Sightglass. Hope you enjoy!

From Sightglass
This washing station is owned by Negusse Debela and services 486 small hold farmers in the Gedeb area of Yirgacheffe. The wet mill and exporting logistics are vertically integrated, allowing us to know more about how the coffee was produced and what farmers contributed to this excellent lot. This coffee is known for its dense floral bouquet, juicy acidity, and a fuller mouthfeel.

Full disclosure: the shot length on my second pull was still a bit long so I’m wondering if even after backing off a step I’m grinding too fine. But the coffee has a bit more bitter to me. There is still some strong flavors. I don’t know if I’m getting the tasting notes. There is definitely a berry taste but I’m getting it on the back end of the sip. With Milk, it’s a very solid flavor. It almost adds a subtle sweetness to drink. I’m more a fan of naturals than washed, and I wonder if the knowledge that this is a washed process is making it hit me slightly differently. In the end I prefer it with a little bit of milk, which is surprising to me.
